
Have you ever had Kale? I hadn't up until this past week. Lately, I've been hearing all about it. It's the new 'thang apparently. This leafy green is jammed pack with tons of vitamins, anti-oxidants, cancer protectants, and all sorts of other stuff that's great for you! You can read up on it
here.Ingredients:
- 1 bunch Kale
- 1/2 chopped yellow onion
- 1 tablespoon olive oil
- 1 lemon
Heat olive oil in a large skillet and add the chopped onion. Saute a few minutes until golden brown.

Remove the kale leaves from the stalks and add to your pan.

Cover and cook on medium until the kale has reduced by about half. 10 minutes or so.
Once the Kale has cooked down, cut 1 lemon in half and squeeze the juice into the pan.

Now your Kale should look like this. Dark green and a little charred. This was actually pretty tasty. Danny and I both loved it, and you can't beat all the nutrients this has. He has requested this be a regular side dish. Yes, my husband, is requesting KALE!
